Skillet brings the food to the customers

A long line formed outside the Skillet on Thursday in the empty parking lot next to the Bellevue Galleria. The Skillet, a mobile street food trailer, traveled from its usual landmark spots in Seattle to feed the hungry lunch-goers of the Eastside.

The owner, Joshua Henderson, came up with the idea for Skillet in 2007 after working as a private chef for a crew on photo shoots. His love for food and the craft inspired him to help create the rebirth of street-food in America.

He outfitted old Airstream Trailers with full commercial kitchens to create dishes such as the signature Skillet Breakfast Sammy and The Burger, served with Oregon natural beef, cambazola, arugula, bacon and jam on a soft roll.

Henderson offers four to five menu items each day, all custom blended and made from local and organic ingredients. Lunch items cost between $9 and $12 depending on the order. Recently, Henderson and his team added a second Skillet trailer to visit the lunchtime crowd on the Eastside.

“We got a lot of input from people who enjoyed our food and wanted to see it over on the Eastside,” said Adrienne Carmin , director of marketing for Skillet. “We hope to be in Bellevue at least twice a week to cater to the local businesses.”

The Skillet trailers visit local office parks, events, and farmers markets daily to provide bistro-style food on the go. The company also offers private catering for corporate events, weddings and company picnics.

The Skillet will revisit the Eastside this week. The first stop will be today in Redmond from 11 a.m. to 2 p.m., at 18400 NE Union Hill Road and in Bellevue on Thursday from 11 a.m. to 2 p.m., at 600 106th Ave NE next to the Bellevue Galleria.
