The Chatalas brothers quietly opened the doors to Tavern Hall at Bellevue Square last week, and have been pleased to find their restaurant attracting customers without actively seeking exposure.
“This concept, for us, was about creating a big, fun space that everybody could enjoy, and one that presented itself in a way that’s unique in the market,” said Marc Chatalas, co-owner of the new tavern-style restaurant.
Tavern Hall is a skip away from Cactus — part of a chain of Mexican restaurants owned by the Chatalas brothers — and unlike anything they’ve done before, said Chatalas.
Joining Marc and Bret Chatalas in designing the 9,500-square-foot space were restauranteurs James Weimann and Deming Maclise, who have collaborated on Seattle hot spots like Bastille and Macleod’s.
Chatalas said the two have a knack for reclaiming aging architecture, often facing a demolition ball, and incorporating them into restaurants.
Tavern Hall’s buildout included church windows from Portland, a facade from a former psychiatric hospital in upstate New York, a giant clock from Buenos Aires and balled columns from a razed building in Baltimore.
“You can’t find stuff like that,” said Chatalas. “Things you buy today look like you bought them today.”
There are also fireplaces, four shuffleboard tables, multiple televisions, seating for 320 and two bars – the countertop for one literally costing pennies to make, as the copper currency makes up the surface.
Tavern Hall started opening on-and-off on Oct. 1, which provided training for staff and insight into the restaurant’s menu, which is already changing.
“What we found was the dinner crowd was busier than the lunch crowd and that was refreshing,” said Chatalas, who noted a large gathering in Tavern Hall during Tuesday’s lunch rush.
Popular menu items include burgers, flatbread pizzas and soft pretzels – a video camera will soon televise the progress of the pizzas as they cook in a brick oven.
Tavern Hall is also providing house-made ginger beer and barrel-aged and batched cocktails through its draft system, which Chatalas said adds quickness and efficiency to bar service.
