Mere months after bringing Katsu Burger back to Seattle’s Georgetown neighborhood, owner Stephanie Kang opened the Japanese-style hamburger joint’s second location in Factoria on Tuesday.

Katsu closed last summer after former owner Hajime Sato found it too difficult to continue its operation, which had been bad news but also a great opportunity for Kang.

“I was a regular here too, and I said, ‘Where am I going to get my Katsu Burger now?’ ” she said. ” ‘Who is going to continue the legend of Katsu Burger.’ “

Kang was already planning an Eastside location when she reopened Katsu Burger in September to the relief to an already well-established fan base in Georgetown. She finally decided to close down her Kimchi Amigos restaurant in Factoria, and replace it with Katsu.

“It kind of made sense to combine all of our restaurants together,” Kang said. “I love the area and we were looking for another location but we couldn’t find any in the area.”

Kang said Kimchi Amigos, known for its kimchi burritos, had only been around for a few months before she closed it for Katsu, but she is saving recipes for possible incorporation into Katsu or a future restaurant’s menu.

Katsu Burger, located at 12700 S.E. 38th St., quietly opened Tuesday,  and Kang said she will launch a strong social media campaign in the weeks ahead. A Georgetown favorite for the seriously hungry is the Mt. Fuji burger. Check out the menu at Katsuburger.com.
